Ammonium Sulfate is a colourless transparent orthorhombic crystal, deliquescent, with an acidic aqueous solution, insoluble in ethanol, acetone or ammonia, and reacting with alkalis to form ammonia. As a nitrogen-containing compound it provides the nitrogen animals need for protein synthesis, growth and development. Urea carries far more nitrogen per kilo but hydrolyses quickly and gives no sulphur. Ammonium sulfate supplies nitrogen together with sulphate in an acidic salt that is stable and easy to handle in particle form, which is why it is used where the acidity or the sulphate is wanted as well as the nitrogen.
