Dairy is the hardest preservation job because the pH is high and the product cannot change taste or texture. Potassium sorbate is the working preservative across butter, cream, processed cheese, yogurt and milk powder, with calcium acetate for buffering and soya lecithin for emulsion stability in ice cream and frozen desserts.
