Use Guide

Handling and Cooking

  1. Hold at -18 °C or below and rotate stock by production lot.
  2. Thaw fillets under refrigeration on a draining tray.
  3. Cook skin-on portions skin-side down first to keep the fillet flat.
  4. Blocks should be tempered, not fully thawed, before band-saw portioning.
